We’re Crazy for This Coconut Rice Cake

Eat this chewy cake warm. It’s great plain or drizzled with my berry sauce for extra antioxidant power. Be sure to use the chewy variety of rice flour sometimes called sweet white rice flour or mochiko. You can substitute fresh or frozen blackberries for the boysenberries. Try Buffalo Sliders with Sweetened Cranberries

  I chose buffalo meat because it’s almost always raised on grass. Grass-fed meat (whether it’s buffalo, steer, or lamb) is higher in omega-3 fatty acids, lower in omega-6 fatty acids, and leaner overall. Baobab Butter Squares

These squares are like lemon bars but made with antioxidant-rich baobab. Baobab is an African fruit that has a powdery texture. You can buy it from Amazon or you can use fresh lemon juice (3 Tbs.) or lemon zest (1 Tbs.) instead of the baobab powder. Feel free to substitute gluten-free flour for the wheat-based flour. Strawberry Almond Cake

This almond cake recipe works well with gluten-free flour. I prefer the taste and texture of Cup4Cup flour. I also use monk fruit sweetener, which works beautifully as a sugar substitute. Soursop (Guanabana) Lassi From my first book, The Age GRACEFULLY Cookbook, here is an easy and delicious beverage featuring guanabana. Called, Soursop Lassi, it’s essentially a lassi drink from India made with yogurt and a pinch of salt. Mango lassi is very popular in Indian restaurants.
