This colorful and refreshing salad is perfect for summer afternoons and evenings. 2 cups (packed) baby spinach, roughly chopped
1 cup strawberries, sliced
1 cup blueberries
1 cucumber, diced (about 1 cup)
½ cup sunflower kernels
¼ cup (loose) fresh basil, chopped
2 Tbs. extra virgin olive oil
1 lemon, zest and juice
2 cloves garlic, pressed or minced
1 Tbs. chia seeds
1 tsp. honey (or maple syrup if vegan)
1 Tbs. water
Salt and pepper to taste
1. Combine salad ingredients in a large mixing bowl.
2. Whisk together dressing ingredients in a separate bowl and then toss with salad immediately before serving.
