Coconut Rice Cake

Eat this chewy cake warm. It’s great plain or drizzled with my berry sauce for extra antioxidant power. Be sure to use the chewy variety of rice flour sometimes called sweet white rice flour or mochiko. You can substitute fresh or frozen blackberries for the boysenberries. You can use gluten-free baking flour instead of the cake flour, and xylitol instead of sugar. Coconut contains lauric acid, which improves cholesterol balance and protects prostate health. Arsenic Warning! How Risky Is Your Rice?

Consumer Reports most recent testing and analysis gave us some new information on the risk of arsenic exposure in infants and children through rice cereal and other rice products. They looked at data released by the Food and Drug Administration in 2013 on the inorganic arsenic content of 656 processed rice-containing products. They found that rice cereal and rice pasta can have much more inorganic arsenic—a carcinogen—than their previous test showed. Turmeric Rice

This rice is mildly spiced because it’s designed to go with Grace’s Turkey in Turmeric Sauce. If you want the rice to carry most of the flavor, substitute coconut milk for half of the water.
