Kale Salad Gets Spicy with Almonds & Peppers

Be warned: When you serve this salad, everyone will be asking you for the recipe. It hits all the right spots—salty, sweet, crunchy, cheesy and fresh! Prep tip: Use bumpy, dark green dinosaur lacinato kale, which tends to be less bitter and tough than curly-leafed kale. Chopped Kale Salad with Spiced Almonds and Red Pepper Ingredients: 2 Tbs. olive oil (divided) 1 tsp. curry powder 1/2 tsp. cumin 1 tsp. unfiltered honey 1/2 cup raw almonds 1/2 cup pitted Kalamata olives 1 small red pepper (seeded and cut into thin strips) 1/2 large bunch kale (washed, stems removed, and chopped) […]

Going Nutty! I’ve Got a Crush on Nuts

Nuts are full of valuable FoodTrients and they’re so easy to eat as a snack or to add into a huge variety of foods from salads and appetizers to main courses, side dishes and desserts. Nuts are one of the most versatile and healthful foods out there, which is why I have incorporated them into my own diet and included 15 recipes in my new book, The AGE BEAUTIFULLY Cookbook, that feature them. Nuts are high in fat and calories, but they are nutrient dense, which means they are full of good omega-3 fatty acids, protein, fiber, vitamins and minerals. […]

Fresh flavors and crunchy textures combine to create a delicious transportable snack that will help you feel energized and satisfied until your next meal. You can enjoy an extra serving of nutritious disease-preventing cruciferous vegetables by packing these kale chips along in your lunchbox, purse, or backpack. Tofu and Vegetable Stir-Fry

Tofu is an excellent alternative to meat, and this stir-fry will provide you with plenty of health-boosting vegetables. Broccoli is a good source of lutein, a hedge against macular degeneration. Cauliflower and kale have phytonutrients that protect against cancer. I use a wok to prepare this dish, but a large skillet will work, too. The tofu doesn’t have to be fried first, but frying gives it a nice texture. SERVES 2-4 Ingredients 1 package (8 oz.) firm tofu 6 Tbs. peanut oil 1 Tbs. grated gingerroot 2 Tbs. minced garlic 1 cup baby carrots 1 cup snow peas 1 cup […]

It’s Snack Time! Chips with All of the Flavor and None of the Guilt

Autumn is here and with it the World Series, football season and other get-togethers, but what would these gatherings be without a few snacks? Now I practically NEVER buy things like chips for my own home, but honestly, if I’m at someone’s house and they’re out there, I’ll give in then regret it later. Thankfully, today there are more tasty and healthful options available. One place to see many of these is at the Natural Products Expo that takes place in Anaheim, CA in the spring each year. The FoodTrients team was there in force back in March, walking the […]

Mama Mia! That’s a Delicious Pizza

Pizza is a favorite food for most of us, but it’s even better when topped with delicious, age-defying toppings. My Kale Cashew Pesto is so full of anti-aging ingredients, I don’t have room to list them all here. (See the full recipe below.) Pesto is a versatile spread that works on pasta, in sandwiches, in soups, and on this delicious Pesto Whole Grain Pizza with Artichokes (recipe below, where it works well in place of tomato sauce.)
