Pineapple Black Bean Salsa

Party food can most definitely be colorful, delicious, and healthy at the same time. This pineapple black bean salsa is a perfect example. Pineapple, beans, avocado, and other nutrient-dense ingredients combine to create a festive dish that promotes optimal energy levels, digestion, and wellbeing. This dish is also versatile. Serves 6-8

1 pineapple, peeled and diced (about 2 ½ cups)
1 ¼ cup cooked black beans (or 1 can, drained and rinsed)
1 avocado, diced
1 orange bell pepper, diced
1 jalapeño, minced
¼ cup cilantro, chopped
1 garlic scape (young stalk), chopped (substitute with green onion)
1 lime, zest and juice
Salt to taste

Combine all ingredients in a large mixing bowl and stir until mixed. Serve with corn or whole grain tortillas or as a topping for tofu or fish.
