YIELD about 1.5 cups
1 whole, ripe avocado, peeled and pitted
1 large clove fresh garlic, peeled
6-8 leaves of parsley, flat or curly
1 Tbs. fresh lime juice
2 Tbs. olive oil
½ tsp. honey
¼ tsp. sea salt
¼ tsp. freshly ground black pepper
¼ tsp. ground cumin
Place all ingredients in a food processor or blender. Add water, 1 Tablespoon at a time until mixture is creamy and pourable, scraping down sides as needed. Serve immediately or refrigerate for up to five days, adding water as needed for consistency.
