                      Chocolate Chip Spice Cookies

                      These chocolate chip and spice cookies are packed with wholesome ingredients like walnuts, rolled oats, whole-wheat flour, and applesauce to reduce caloric content while maximizing nutrients. They are made without butter and without white or brown sugar, yet they maintain a traditional taste and texture.

                      Oats have anti-inflammatory, antioxidant, anti-itch, and anti-irritant properties. The fiber and omega-3 fatty acids in oats help lower your cholesterol. Cinnamaldehyde is a powerful antioxidant found in cinnamon. The spice also contains coumarin, a natural blood thinner.

                      YIELDS 24 Cookies

                      Ingredients
                      1 cup rolled oats (not instant or steel-cut)
                      1 cup whole wheat pastry flour
                      1 cup all-purpose flour
                      1 tsp. cinnamon
                      ½ tsp. sea salt
                      1 tsp. baking soda
                      1 whole egg
                      2 Tbs. canola or grapeseed oil
                      1/3 cup applesauce (unsweetened)
                      ½ cup maple syrup
                      2 tsp. pure vanilla extract
                      1 cup chopped walnuts
                      1 cup semi-sweet chocolate or butterscotch chips

                      Procedure

                      1. Preheat oven to 350ᵒ F.

                      2. Combine oats, flours, cinnamon, sea salt, and baking soda.

                      3. In a separate bowl, blend egg, oil, applesauce, maple syrup and vanilla.

                      4. Pour liquid mixture into dry mixture and stir well to combine. Fold in walnuts and chips.

                      5. Drop spoonfuls of dough onto a baking sheet and bake 12-14 minutes until golden brown.
